Tex-Mex

CrockPot Pulled Chicken


I discovered a great blog, http://www.healthymomskitchen.com.  Please check it out!  It is full of fantastic information, recipes and it even helped introduce me to a wonderful co-op program called Bountiful Baskets.  (I plan on making a Bountiful Baskets blog soon)
Anyways, at Healthymomskitchen.com I came across a pulled chicken recipe.  I didn't follow the recipe exact, as I enjoy making my own salsa.
I gathered up the usual suspects: tomatoes, cilantro, jalapeno, onion, garlic & lime
Oh how I LOVE to cook with a crock pot, especially back when I worked.  What a fantastic way to cook a great meal and have it ready once you get home from work.
Lug out your big crock pot and turn it on high.  Add all your veggies, 4 chicken breasts (or whatever pieces you'd like), squeeze lime juice and add 2 cups of chicken broth and S&P to taste.
Now's the easy part....walk away & go have fun.  I prefer taking the kids outside and play in the nice Texas heat.
Let cook.


You know when it's ready when you're able to take 2 forks and shred the chicken.



This was by far, one of the most delicious chicken dishes I've ever eaten.  The sauce, similar to a delicious Ranchero sauce that reminds me of my time in beautiful San Antonio, Texas.  This chicken is great as is.  Warm a corn tortilla, add chicken, diced avocado, squeeze of lime and top with cilantro for a GREAT taco.  I chose to make quesadillas.
Take a pizza stone, add flour (only have wheat flour in Casa de Garrison--translation--our house) to keep the tortillas from sticking. Monterrey Jack cheese, chicken a bit more cheese, top with tortilla.

The only things my 2 & 3 year olds could mutter, the entire time they ate an entire quesadilla EACH was "mmmmmmm" "mmmmmmmm Mommy mmmmmmmmmm"






Beef Fajitas

Just about every single day, I will ask my husband what he wants for dinner and his response is always the same, "FAJITAS"....even if we had them the night before (and the night before that)
Once you get to know me, you'll learn that I'm a penny pincher.  I try to get to Sam's Club right at 10 am, when the public can shop.  I get to the meat department as quickly as possible so I can look at the meats and see what they have marked down.
