Shrimp Ceviche


When most people think about ceviche, they picture raw fish.  This is my version, which has cooked shrimp.  There are so many reasons I love this dish...from the crisp raw veggies & avocado, to the simple dressing of lemon & lime juice.  It's wonderful on a hot day!  So refreshing!!!

1 pound shrimp: shelled, deveined
Red bell pepper
Bell pepper
Red onion
Serrano
Avocado
Fresh squeezed lime & lemon juice



In a pot, add water & old bay seasoning.  Bring to a boil then add shrimp that has been peeled & deveined.  Cook for about 6 minutes.
Dice the red, bell, seranno, onion & avocado.  Squeeze lime & lemon juice on top.
Either half or third shrimp (depending on size), add and mix.
