Beef, Mushrooms & Noodles

Trying to think about what I was going to make for dinner, I remembered I had sirloin leftover in the fridge that needed to be cooked.  Over the weekend I made beef fajitas for my handsome husband's birthday (they're his favorite).  Since we're spoiled, we don't like regular fajita meat, so I use sirloin instead.

I cut the sirloin steak into cubes (or you could buy stew meat).  Covered the meat with whole wheat flour and added fresh ground salt and pepper to the meat.  Be sure to get your hands dirty and mix the meat around, as to make sure all the meat is covered with flour, salt n peppa.

In my dutch oven, I add a tablespoon of butter, then add extra virgin olive oil, and heat.  Once butter is melted, add the meat to the pan.  Brown on all sides. 

Dice a small-med size red onion and mence 5 cloves of garlic.  (you can use less garlic.  I read that garlic is really good for you...so if a little garlic is good, a lot has got to be better :)
Once meat is browned, remove and set aside.  Add the onion, garlic and red wine.  I think of wine like I do with garlic.  A little is good, but a lot is always better!  Don't forget to use a wooden spoon and try to get all the crusties on the bottom and side of the pot.  That's deliciously yummyness!!!!

I always have my kiddos make my beef broth (or chicken).  You can use can, or whatever you'd like. 
Add a couple cups of beef broth to your pot.  Again, you can get all the crusties off the bottom of your pan.

Bring to a boil and cook the mushrooms for 15 minutes.   Add your meat (and the juice) back to your pot.
Bring to a simmer.  Add a small bunch of rosemary, or whatever fresh herbs you may have.  Let simmer on low for an hour.  Add 3 tablespoons of sour cream.  I also added a teaspoon of SMOKED PAPRIKA....please understand I have a large addiction to it.  I think it should go on just about EVERYTHING!

Once your noodles are cooked (we only use whole wheat) add to your dutch oven and stir.  Plate & enjoy!

    Gotta figure a way to change it up a bit.
